Easy Delicious Sugarless Mint Chocolate Chip Ice Cream… YUM!

When we first started eating the modified Ketogenic Big Fat to Skinny way, this was the one sweet treat I actually missed!  Mayfield’s Mint Chocolate Chip Ice Cream was my absolute favorite.  This homemade version came so close to the “real thing” that we didn’t miss the sugar at all.  You’re sure to love this totally Ketogenic, High Fat, Low Carb & No Sugar treat!  It is fairly low calories too only about 100 calories per scoop even when using regular whipping cream!


  • 2 Cups Unsweet Vanilla Almond Milk
  • 2 Cups Whipping, Heavy Cream or Half & Half
  • 1/3 Cup Swerve Confectioners
  • 1 tsp+ Liquid Stevia to taste (I used Pure Via)
  • 1 tsp Vanilla Extract
  • 1 tsp Peppermint Extract
  • 2 Squares Unsweet 85% Extra Dark Cocoa (I used Lindt)
  • ½ tsp sea salt
  • Food Coloring (Optional)


Measure & stir all ingredients (except chocolate) together in a large mixing bowl.  The chocolate should be grated or chopped fine to medium sized slivers. Stir grated chocolate slivers into the rest of the mixture to incorporate.  Load into ice cream maker following manufacturer’s instructions.  We tested using the Cuisinart ICE-30BC Pure Indulgence 2-Quart Automatic Frozen Yogurt, Sorbet, and Ice Cream Maker.  The almond milk gave it the combination of creamy & icy.  We enjoyed the light icy texture which would be awesome on a hot summer day.  Great for us who live in hot-lanta!
